Fruit Leather

This recipe is berry berry simple and barely qualifies as a recipe, but it makes delicious fruit leather that really tastes like fresh fruit.

Ingredients

16 ounces mixed berries

2 apples or 1 apple and 1 pear (2 blandish fruits with a lot of pectin)

2 tablespoons lemon juice

1 1/2 tablespoons honey

This recipe is berry berry simple and barely qualifies as a recipe, but it makes delicious fruit leather that really tastes like fresh fruit.

For the berries I used frozen, just because it’s cheaper, premeasured and available without compromising quality in the winter and early spring when I’m making trail food. Leave it on the counter to thaw or zap it in the microwave for 30-45 seconds to soften (or if you’re the kind of person that plans ahead put it in the fridge the night before)

Combine in the blender with your apples and/or pears, peeled and coarsely chopped, lemon juice and honey. Puree until smooth. You can strain it to remove the seeds, I didn’t and I have no regrets.

The mixture perfectly filled 2 trays in my dehydrator. You want it to be thick enough that it’s not translucent, but not so thick that it reaches the lip of the tray. Follow the instructions for dehydrating fruit, I let mine go overnight.

Let it cool so that you can peel it off the tray, then slice to your desired shape and size. If you stack them together they do tend to stick, but you can peel the strips apart.
